Twice Baked Potatoes

Serves 4
4 medium baking potatoes
salt and pepper to taste
skim milk
2 tablespoons margarine
butter flavored cooking spray
4 tablespoons parmesan cheese
paprika
Bake potatoes in the oven until the potato
skins are crisp. Cut the potatoes in half lengthwise. Scoop the potato from
the shells into a medium sized bowl; mash. Add the salt and pepper, milk and
margarine, mixing well until you get the consistency you want.
Spoon the mashed potatoes back into the
shells. Spray with butter flavored cooking spray, sprinkle with parmesan cheese
and paprika.
Place the potatoes into a baking dish and bake at 400 degrees for 10 minutes or until the top is golden brown.
