Swordfish with Mustard Butter

Serving Size : 4
1/4 cup butter -- room temperature
2 tablespoons Dijon mustard
2 tablespoons fresh basil -- finely chopped
2 pounds swordfish steaks -- 3/4 inch thick
vegetable cooking spray
salt and pepper -- to taste
Mix first 3 ingredients in a small bowl. Prepare barbecue grill or
broiler. Spray grill or broiler pan with vegetable cooking spray. Season
the fish with salt and pepper. Grill or broil fish just until cooked
through, about 3 minutes per side. Transfer to plates. Top each with a
spoonful of the mustard butter.
