BBQ Pork Chops In A Skillet

6 pork chops -- 3/4" thick
1 cup rice -- uncooked
3 cups tomato juice
1/2 teaspoon red pepper sauce
1 teaspoon salt
6 large onion slices
6 lemon slices
6 tablespoons brown sugar
6 tablespoons catsup
vegetable cooking spray

Spray a large skillet with vegetable cooking spray. Brown chops slowly on both sides. Remove the chops and drain off any excess fat.

Stir in the rice, tomato juice and red pepper sauce; mix well. Arrange the pork chops on top of the rice mixture and sprinkle with salt. Place a slice of onion, a slice of lemon, a tablespoon of brown sugar and a tablespoon of catsup on each chop. Cover tightly and simmer slowly over low heat 40 minutes or until rice is cooked and pork chops are done.
